Led by experienced chefs, the food and beverage teams at our 16 characterful country houses have been working hard to come up with an exciting new range of winter dishes. This week we’re looking at what’s cooking in our kitchens and what’s in store for the coming season.
Using home-grown herbs and vegetables from our own gardens whenever possible, our menus change with the seasons to ensure we offer delicious food made with only the freshest ingredients. To supplement what our grounds and gardens provide, we only select the best produce from around the British Isles wherever we can.
With great quality, wholesome, and nourishing options that serve to set you up for the day ahead and satisfy your appetite after walking and exploring, our warming winter menu launches on 9 October 2023 and is available until spring 2024.
Some of our favourite new dishes include luxurious French onion soup with cheesy croutons, crispy pork belly salad, and an indulgent steamed treacle sponge or dark chocolate tart topped with caramelised bananas.
Inspired by the wild landscapes of the Scottish Highlands and the fantastic pork it produces, Danny McCann, head chef at our country house in Glen Coe, has created a pressed ham hock terrine, served with BBQ pulled pork croquette, gherkins, and a tangy mustard mayo.
Paul Barnes, head chef at our wonderful Welsh house in the Brecon Beacons, is bringing a lesser-known British classic to the table. A recipe believed to have originated in Devon, Homity Pie is an open-topped shortcrust pastry case filled with a hearty mixture of leek, potato, and cheese.








All stays at our country houses are on a full-board basis and include daily cooked and continental breakfasts, generous packed lunches, and three-course evening meals. At the bar, we have a reassuringly small selection of craft beers, soft drinks, local spirits, and award-winning wines available, and members get 10% off their bill.
